Veggie Stuffed Twice Baked Potatoes

Ingredients
- 1 very large Idaho potato
- broccoli florets-2 to 3 large
- 1-2 green onions, sliced tops and bottoms
- 1/4 bunch fresh curly leaf parsley, minced well
- 2 tablespoons melted butter
- 2 tablespoons, plus, finely grated Gruyere cheese
Instructions
- Scrub potato clean, pierce with fork several times, and bake in 350 degree oven until tender. Don't use an oil coating or wrap in foil. When potato is done, slice in half, and scoop out the meat. Mix potato with butter and sour cream. Set aside.
- Roast broccoli with sprinkle of olive oil, kosher salt, and pepper in 400 degree oven until fork tender. Chop florets and mix with parsley, and green onions. Add to potato mixture, and mix well. Fill each potato half and top with grated cheese. Return to 350 degree oven until cheese melts.
