- 1 very small Idaho potato
Instructions
- Usually you can find organic potatoes that are very small. Wash clean, and pierce to release steam. Keeping potato very wet, roll in kosher salt until very well coated. Microwave for 5 minutes on high, then remove from microwave and brush to remove excess salt.
- This method produces a very well cooked potato with a crispy skin. Squeeze potato open and top with anything you like, from butter to all veggie toppings, your favorite cheese, yogurt, bacon bits, even a little chili. You may cook several at a time.
