Ingredients
- 2 sticks very cold butter
- 2 cups + 4 tablespoons all-purpose flour
- ½ cup powdered sugar
- 4 eggs, slightly beaten
- 2 lemons, zest & juice
- 1 teaspoon baking powder
- 2 cups sugar
Instructions
- Preheat oven to 350-degrees
- Mix together with pastry fork or pastry cutter the butter, 2 cups all-purpose flour and powdered sugar.
- Line a 9x13 glass baking dish with parchment paper, and press mixture into pan. Bake at 350 degrees for 15-20 minutes, until set. Do not allow to brown. I actually baked for 30 minutes, I have a new oven!
- Start the filling, mix the eggs, lemons (juice and zest), baking powder, sugar and remaining 4-tablespoons of all-purpose flour. Pour over baked crust, and bake at 350 degrees for 25-30 minutes.
- Remove from oven, and sprinkle lightly with powdered sugar. Allow to cool completely in pan, and using parchment paper, gently lift entire contents from pan. Cut into squares with a very sharp knife, and place on serving tray or individual plates. Garnish with fresh mint or fruit.
- Tip for the zest—I usually employ my micro plane, but this time I used an actual zester that made little ribbons of the zest, very tasty, very fun! And, oh, very delicious!
