Ingredients
- 2 heads white cabbage
- 12 -15 green tomatoes
- 10 medium sweet or Vidalia onions
- 6-8 large red bell peppers
- 10 green bell peppers
- ¾ cup coarse kosher salt
- 2 pounds light brown sugar (4 cups packed)
- 3 cups white sugar
- 4 cups apple cider vinegar
- 2 cups water
- 3 tablespoons mustard seed
- 1 tablespoon celery seed
- 2 teaspoons ground ginger
- 2-3 tablespoons ground turmeric
- 1 teaspoon red pepper flakes
- 2 teaspoons ground mustard
Instructions
- Finely chop the vegetables in a food processor, batch at a time. Place in a very large stainless steel bowl, sprinkle with salt, and allow to sweat overnight, covered, in the fridge.
- Rinse and drain well, in a good colander. Place in a large stock pot.
- In a separate bowl mix together the remaining ingredients and then add to the vegetables.
- Allow to come to a boil on medium high heat, boil for 5 to 10 minutes, using slotted spoon, put into sterilized pint jars, and seal with sterilized lids, being sure to wipe the jar surfaces clean. Do not over-tighten lids
