Ingredients
- 2 large racks of baby back ribs
- ¼ cup Greek seasoning
- ½ cup olive oil
- ½ cup balsamic vinegar
- ½ cup Worcestershire sauce
- For Special Sauce:
- 1 large Vidalia onion
- 1 stick butter
- juice of 12 lemons
- 2 12-oz cans mushroom sauce
Instructions
- Rub ribs down with Greek seasoning, then with olive oil, Worcestershire and balsamic vinegar. Place on very hot grill and sear both sides very well. Stack to the side, turn off direct heat and let heat from side burner continue to cook the ribs.
- Turn often and baste with Worcestershire sauce only! Cooked off direct heat, these ribs should cook about 1 1/2 to 2 hours. Outside appearance should be even, dark brown. Ribs will be very tender and easy to cut apart.
- Meanwhile, Sauté one very large chopped Vidalia onion in a stick of butter until soft and clear. Add the juice of a dozen lemons and two 12 ounce cans or jars of your favorite mushroom sauce. Cook on medium low heat, adding several generous shakes of Worcestershire sauce to taste
- After ribs are sliced apart place in a large bowl, pour Special Sauce over them and serve.
- It's fabulous, and don't forget some crusty bread for dipping!
