Ingredients
- 1 8oz package cream cheese, softened
- 2 sticks butter, softened (1 cup)
- 2 cups all-purpose flour
- 1 12oz package dried apricots, soaked in water for one hour
- ½ cup sugar
Instructions
- Preheat oven to 350-degrees
- Cream butter and cream cheese together, add flour and mix well. Wrap dough in plastic wrap and chill for at least one hour.
- Drain apricots, reserving ½ cup water, place in small sauce pan, add ½ cup sugar, and gently simmer until apricots are soft.
- Roll dough out to 1/8 to ¼ inch thickness, and cut rounds no larger than ½ inch, not any larger than the apricots. Put one apricot between 2 rounds, and place on a baking sheet lined with parchment paper to prevent sticking.
- Bake at 350 degrees for approximately 30 minutes, or until biscuits are golden brown. These may be assembled and frozen, put in zip lock bags, and baked as needed.
