Ingredients:
2 limes (zest & juice)
1 T canola oil
1 garlic clove (minced)
2 tsp. honey
½ tsp. fresh cracked black pepper
2 c. frozen yellow corn kernels (thawed)
1 large red bell pepper (chopped)
½ c. red onion (chopped)
¼ c. fresh parsley (chopped)
What to Do:
Zest and juice two limes (be sure to zest limes first, then juice).
Mix all ingredients together and chill very well (at least 4 hours).
This is great to accompany a sandwich or is fantastic to accompany salmon.
