I am not a baker… I just am not. There was another time I attempted to bake THE EASIEST cookie recipe and somehow I managed to screw it up because I didn’t let them cool long enough. But I digress…
After my massive failure at Nanny’s Cobbler I started working on my cobbler and doing some research I learned some stuff. Most importantly, I learned you can create a cobbler with a batter, biscuit or pie crust. Nanny’s Cobbler is batter based, and obviously not one I can master, but I make a mean biscuit. So, I developed this new recipe. Use any combination of berries you like, I like blueberries and blackberries. Fresh is best but this works with frozen to0. And of course serve it with some fabulous vanilla bean ice cream.
Berry BISCUIT Cobbler
Ingredients
4 cups berries (fresh or frozen)
3/4 cup + 2 tablespoons sugar
1 1/2 cup flour
2 teaspoon baking powder
1/3 cup room temperature butter
1 cup buttermilk
What To Do
Preheat oven to 425-degrees.
Put the berries in a deep, round baking dish (a Dutch oven works too). Sprinkle them with 1/2 cup of sugar. Separately, combine the flour, baking powder and 1/4 cup sugar and with your fingertips blend in the butter. Stir in the buttermilk being careful not to overmix. Spoon the biscuit mixture over the berries, it doesn’t have to cover them completely. Sprinkle the top with the 2 tablespoons of sugar and bake for 30 minutes.
