Ingredients
1 can artichoke quarters, drained
1 can hearts of palm, drained and sliced
1 can black beans, drained and well rinsed
1 container grape tomatoes, cut in half
4 oz. fresh mozzarella, must be fresh, cut into bite sized pieces
4-6 leaves fresh basil, stack these, roll them up and gently slice into ribbons—don’t chop, turns the basil brown
What To Do
Mix all of the above well, drizzle with olive oil, balsamic vinegar, sprinkle with kosher salt and fresh ground pepper to taste
Nice thing about this salad, you can add other ingredients that you like, such as a spoonful or two of capers, two or three sliced green onions, tops and bottoms—EXPERIMENT!!
