I absolutely love the way my husband James – affectionately known as Big Daddy – makes salmon. He makes a sauce that’s a fantastic combination of sweet and savory flavors… it’s unbelievably good and something I can’t get enough of.
The problem is my husband loves to golf on the weekend, and he’s the better griller in our house. So, what’s a gal to do? Well, I just decided I was going to try to do his salmon in the oven. And I have to tell you, even he approved.
I don’t want anything too flavorful to overpower the delicious salmon recipe so I decided to make cheese tortellini with a Parmesan cream sauce. My producer flipped for this sauce and it’s now a regular staple in his kitchen.
I also love to take advantage of fresh green beans while we can still get them. So I blanched them, threw them into a ice-water bath and then added some extra flavor with olive oil and lemon juice.
But let me tell you one thing about making Big Daddy’s salmon, you are going to want left-overs. I came up with this fabulous salad to make with the left-over salmon… it’s so great and so easy.
