Ingredients
- 4 tomatoes
- 1 cucumber
- ½ green bell pepper
- 1 medium onion
- 1 cup water
- 2 tablespoon olive oil
- 3 tablespoons red wine vinegar
- 2 cloves garlic
- ½ teaspoon salt
- 1 tablespoon pepper
Instructions
- Core and coarsely chop tomatoes, cucumber, bell pepper and onion. Put the vegetables and seasonings in the blender in two batches. Blend until pureed, pour into a large bowl and chill in the fridge.
- Serve with cilantro, lime and a scoop of your favorite soft cheese (like ricotta or cotija). You can also make this a meal by adding some chilled, cooked shrimp just before serving.
