I really am crazy for crawfish. Growing up in South Louisiana we had it all throughout the Spring and it was fabulous.
One of my favorite dishes is Crawfish Etouffee and when you make it in South Louisiana you make it with crawfish fat. Well, now that I live in Mississippi we don’t have access to the fat, so my mom gave me the tip to substitute crawfish fat for a can of cream of shrimp soup. It’s fantastic.
I also grew up loving Crawfish Cardinale. This is my grandmother’s recipe and while she kept it a secret all her life, now that’s she’s gone it’s been spread around the family and now… around the world.
Finally, in this show we created a Crawfish Po Boy. You won’t believe how much I have craved this sandwich since we made it. It’s delicious… the crawfish is crisp and wonderful and the sauce that I top is with is incredible. I’m not sure which I prefer – the crawfish or the sandwich.
