I have had the best excuse to eat catfish this August, celebrating National Catfish Month! Bake it, broil it, poach it and of course you can grill it, which is perfect during these hottest months of the year. Well, you know I love experimenting in the kitchen. So I thought it would be fun to do a show where I asked you for your favorite way to eat catfish. We posted it on Facebook and came out with some great suggestions. My favorite three are what I cooked for this show.
Catfish Allison comes from a fabulous restaurant in Indianola, Mississippi called The Crown and is featured in her cookbook Classic Catfish From The Crown at the Antique Mall. It’s simply the easiest, tastiest, most elegant way to prepare catfish. People will think your a gourmet chef and they’ll have no clue how simple the recipe truly is.
Someone else suggested Catfish Tacos… you know catfish is so mild that it takes just about any flavor you add to it including the fabulous Mexican spices I added for this one. On top of that, I took a recipe for a fabulous Lime/Cilantro Spread that I use on hamburgers and modified it for tacos… and boy was it a hit. The crew loved it so much they ended up using it as a dipping sauce for chips.
Finally, someone said she loved Catfish in Crawfish Cream Sauce. Oh wow! It’s rich and heavenly (although you can use fat-free 1/2 and 1/2 to cut back on the richness)… and the thing that I love is that the catfish really stands up when smothered in that great sauce.
