Ingredients
4 medium size tomatoes
2 cloves garlic
2 green onions
salt
pepper
5-10 leaves of fresh basil
2 tbsp olive oil
drizzle of balsamic vinegar
What To Do
Dice tomatoes and put in a medium sized bowl. Finely chop the garlic (or put through a garlic press) and add to bowl. Depending on your taste, grab the basil leaves, lay them on top of each other, roll them up and cut into ribbons. Chop green onions (tops and bottoms). Put everything in bowl and stir around.
Drizzle with a little olive oil, just enough to make everything glisten. Next add just a dash of balsamic vinegar and some salt and pepper. Stir it up and taste; adjust it as you like. Want a little more tang? Add more vinegar. Crave some more freshness? Add more basil.
